The Monteverde Cloud Forest Reserve is the classic. Curi-Cancha is quieter and good for birds, and Santa Elena is higher, wetter and less busy.

Hummingbirds and coatis, easily. Quetzals, sloths and frogs are hard to find without a guide's eye and scope.
